Has anyone been able to Connect their GPS to their CPU to Extract Vehicle/Engine Data, a friend of mine says that my Garmin has the Capacity to be Hooked Up to a Connector to get this data and have Exact Engine Functions Plus Other useful Data? If so Does my model Pajero have This Connector?

Yep. NS diesel onwards is OBD2 compatible.
NM / NP diesel is not, it uses a proprietary Mitsubishi protocol for the computer unfortunately......
